Assam and Darjeeling teas have a very interesting history. Chinese tea started to make its way to England in the 18th century via the East India Trading Company, when they used silver to pay for the tea supply.
Due to insatiable demand, England's coffers of silver were running dry, and they had to find another way to pay for their teas. Soon, poppy plants cultivated in India for opium were used to pay for shipments of tea, setting off a series of events that culminated in the 2 Opium Wars of the mid 19th century.
Meanwhile, the English had purchased vast swaths of land in the Assam and Darjeeling regions of India to facilitate their own supply of tea, using the Camillia Sinensis var Assamica in Assam and the traditional Camillia Sinensis var Sinensis in Darjeeling. During this period, it was also noticed that some Chinese green teas were using certain dyes that contained arsenic, causing the English tea drinking society to shy away from green teas in general. Therefore, the Western tradition of drinking black teas was cemented.
Assam has been a favorite of western tea drinkers, and English tea drinkers in particular because of its ability to stand up to higher brewing temperatures and its bitter and astringent taste profile that can be offset by the use of milk and sugar to cut its acidity. Assam (from var Assamica) is typically a stronger, higher caffeinated, more bitter tea, while Darjeeling (from var Sinensis) is lighter in caffeine and can be considered more palatable and easier to drink without milk or sugar.
Black teas are fully oxidized, meaning they have undergone the most amount of processing when compared to all other types of tea from the Camillia Sinensis plant. These teas go through a short withering phase, followed by a process whereby the leaves are broken and rolled, which exposes its oxidizing enzyme to oxygen, kicking off a multi-hour to multi-day oxidation process. This oxidation (mush like when an apple or avocado turns brown when exposed to air) process turns the leaves a dark brown or red color. Full oxidation, followed by a quick firing process to halt oxidation and start the drying process all combine to give black teas their distinctive nutty, rich and warm flavors.
Our Vanilla Earl Grey tea blend is infused with organic bergamot oil, vanilla flavor and elder flowers, giving this tea a flavorful warmth that is typically used as a coffee replacement - in fact, when you order a true "London Fog", it will be made with steamed milk and a Vanilla Earl Grey tea.

We currently offer shipping via USPS (The US Postal Service).
Please enter your address information as you normally would for USPS delivery. For instance, we only get packages delivered in Jackson via USPS to our PO Boxes, so keep that in mind.
We have negotiated rates with our shipment provider, so we are offering you the best and cheapest option available at this time.
If you live in Jackson Hole or the surrounding area, I'd be happy to deliver your teas to you personally. Just use the "Pick up in Person" option at checkout, and enter the physical address you'd like the package delivered to.
If you've entered your shipping information incorrectly or accidentally chose the "Pick up in Person" option, please email us at info@headwaterteas.com as soon as possible to rectify the situation.
I aim to send out your order the next business day. We will also provide you with a USPS tracking number for your package, free of charge. If you'd like to buy insurance for your package, that option is available, as well as the ability to upgrade your delivery preferences.
Please see our Policies page for information on refunds or returns. In short, if you haven't opened your tea packages or used your teaware, we'd be happy to refund or replace your order. Just send it back via USPS (at your expense) to Headwater Teas LLC, PO Box 3904, Jackson, WY 83001. Then send us an email explaining what happened, and we'd be happy to help you.
